Johnny Marzetti: Kate's Quick Bites

Tom Katzenmeyer, the Greater Columbus Arts Council executive director joined Kate in the kitchen to make his family recipe Mom's Marzetti and talk us about the many facets of this amazing organization and his hopes for its future.

Ingredients:

  • 6 medium onions chopped
  • 1 1/2 pound ground chuck
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 1/4 cup butter or margarine
  • 8 cups (1 pound) shell macaroni
  • 2 8 ounce cans of tomato sauce

Directions

  • Melt butter in a large skillet or saucepan
  • Saute onions, ground chuck, salt, garlic salt and pepper for about 15 minutes, stirring often with a fork to prevent the meat from sticking.
  • At the same time, cook the macaroni until it is barely tender
  • Drain the macaroni
  • Toss the macaroni with 1/4 cup butter and then place it in two 2-quart casserole dishes.
  • Add 2/3rds of the cheese to the meat mixture and still until it is melted.
  • Add 1 can tomato sauce, mushrooms to the meat mixture and pour over the macaroni.
  • Top with 1 can of tomato sauce.
  • Sprinkle with remaining cheese.
  • Cool quickly and wrap for freezing.
  • Preheat over to 325 degrees.
  • Bake casseroles, uncovered for 1 hour and 40 minutes or until bubbling.

Please note: This recipe calls for freezing the mixture. You can cook right away as we did in the segment and it will take much less time.
