Cookie Cake: Kate’s Quick Bites

We make a cookie cake with talk with the Aimee Wissman founding member of Returning Artists Guild, an arts organization that is not only a platform for healing and growth but also provides the tools and support. And, of course, we’ll make a quick bite.

Ingredients

  • One pack of lemon cookies
  • One sprite
  • Nondairy coffee creamer - plain or vanilla flavor

Directions
Split cookies and icing into two bowls

Break up cookies into a powder (need a mashing instrument of some kind, we would just put them in a bag and break them up like crackers for breadcrumbs)

Mix almost all of the sprite into the cookies and microwave for approx 3-5 mins, you do have to kinda watch and add time until its cooked through… you can gauge this by the bubbles usually.

Mix the icing, a lil bit of creamer, and the sprite if needed to get a spreadable mix

We would ice our cakes down in a bag of ice, but chilling in the fridge or counter cooling before icing is preferred unless you like a hot slice.
