Making vegetables the main course

Many of us grew up hearing some variation of the phrase "eat your vegetables,” with carrots, green beans and corn relegated to side dish status on our dinner plates.

Then came the phrase “eat the rainbow,” which was a push to add more color and a variety of fruits and vegetables to our dinner plates.

Chef and cookbook author Cara Mangini has been on a crusade to make vegetables the main event at meal time.

She’s well known to many WOSU listeners, who may remember her former stand “The Little Eater,” at North Market and her later Clintonville restaurant of the same name.
